2021 IFSH/FRI Virtual Annual Symposium

Illinois Institute of Technology’s (IIT) Institute for Food Safety and Health (IFSH) and the Food Research Institute (FRI) join forces to organize a four day “Environmental Controls: Emerging Technologies and Predictive Analytics to Address Complex Sanitation Challenges” virtual symposium on September 27-30, 2021.
Cleaning and sanitation are crucial components of a good food safety plan. Many outbreaks have occurred due to inappropriate sanitation protocols or ineffective planning of hygienic zones. A good sanitation plan involves careful planning and knowledge (and some would say an art) to identify harborage sites, appropriate sanitizers and their usage, and implementation of sampling and detection technologies that will yield meaningful results.
This virtual symposium is a unique opportunity for participants to learn from industry experts on hygienic zoning principles, sanitation and decontamination strategies.
Amongst the impressive list of speakers is Richard Brouillette, Food Safety Director at CFS, leading a session on “Decontamination of Low Moisture Foods in Processing Facilities”.
In his session, Richard will discuss prevention and selecting a hygienic design standard to apply to infrastructure and equipment in Low Moisture Food
Processing Facilities, before diving into decontamination options. His presentation will cover the “valuation” definition, selection criteria for the types of cleaning and sanitizing (dry, partially dry/wet, or wet) depending on the type of soil, equipment, infrastructure, and level of cleanliness to achieve. Including also a discussion on decontamination methods following events such as microbial contamination.
